Today is the morning of my birthday eve so what better reason to eat dessert first and celebrate than with a pre birthday dessert of one of my favorite pies/tarts, Key Lime!!! I love citrus, lemon, lime, orange and even grapefruit so today I celebrate with key lime.
So grab a bottle of bubbly and let’s make some pie! You can start by either preparing my favorite version of a cookie cracker crumb crust or you can use a premade graham cracker pie crust. Next up let’s whip some cream to top our little dessert first party off right and then begin to whip up this pie. After all it is my birthday so let’s celebrate and eat dessert first.

- 3 egg yolks
- 8 ounces of softened cream cheese
- 4 ounces Nellie & Joe’s Key West Lime Juice (you can find this in your local grocery store)
- 14 ounce can sweetened condensed milk
Place cream cheese in a mixing bowl and stir until smooth, do not beat. Pour condensed milk into bowl with cream cheese and mix until smooth with hand blender. Add egg yolks one at a time and mix well. Pour in Nellie & Joe’s Key West Lime Juice and continue blending until mixture is smooth. Pour the filling into the prepared cracker pie crust and bake at 350° for 15 minutes. After baking, let stand for 10 minutes then refrigerate to chill well.
Top with fresh whipped cream and garnish with lime zest to present.
Cookie Cracker Pie Crust –
½ bag of Nilla wafers
1 cup pecans
2 Tbs granulated sugar
¼ cup melted butter
Combine wafers, pecans and sugar together in a food processor and pulse. Slowly drizzle in melted butter until crust begins to clump together. Press crust to pie plate or tart pan and bake for 10 min at 350.
Allow crust to cool completely before filling.
